Sure, here in Louisiana we have the standard crawfish boils and/or seafood boils where 10 to 1,000 people come over and have a few adult and non-adult beverages. But one thing I have learned from extensive travel throughout the U.S. is each year more and more Cajun themed restaurants open in cities located outside the borders of Louisiana. Heck, have you ever Googled "Crawfish Festival" or "Seafood Festival"? I think the results will surprise you as they did me. My point is as time goes on, crawfish and Cajun styled boiled seafood as well as other Cajun meals is becoming more popular. But, has anyone considered cooking a big pot of Chicken & Sausage Jambalaya or Chicken & Sausage Gumbo for 50 to 100 people. (Please visit www.tigertailgating.com and check out the menu.) If you really want to get the attention of just a few people, let's say 5 - 10 business acquaintances or friends, then I will recommend preparing one or a sample of the following: Shrimp Creole Crawfish or Chicken Ettouffee Shrimp Orleans Chicken Orleans Oysters Bienville Creole Orange Roughy Cajun Style Brisket Yes, it is important to remember the process of injecting meat with marinades was invented here in Louisiana. So, we must include the following ideas as well: Cajun Fried Turkey Breasts or Whole Turkey Fried Pork Loin Fried Whole Tenderloin Finally, believe it or not, we do know how to BBQ and/or grill here in Louisiana. Some ideas for grilling are: Cajun Style Wings French Quarter Chicken Grilled Fish (Red Snapper, Trout, Catfish, etc.) Grilled Stuffed Fish Grilled Stuffed Seafood Pork Chops Grilled Stuffed Beef Tenderloins BBQ Chicken with Beer Based BBQ Sauce BBQ Hamburgers Cajun Ribs All food items mentioned above can be served via the Cajun Party Tray as well as on the Budweiser Party Table.
